This was shared with us by our Miss Mary and well…it’s a huge hit!
For the Crust you will need:
6 oz spaghetti
2T butter or margarine
1/3C grated Parmesan cheese
2 well-beaten eggs
For the “Pie” Filling you will need:
1C/8oz cottage cheese
1lb of ground beef – optional
½ C chopped onion
¼ C chopped green pepper
1 8oz can tomatoes, cut up
1 6oz can tomato paste
1t. Dried oregano, crushed
½t. Garlic salt or powder
1 jar of your favorite spaghetti sauce
½ C. shredded mozzarella/cheddar cheese
Cook the spaghetti as usual; drain (should have about 3 cups spaghetti). Stir butter into hot spaghetti. Stir in Parmesan cheese and eggs. Form spaghetti mixture into a “crust” in a buttered 10-inch pie plate. Spread cottage cheese over this crust.
In a skillet cook ground beef, onion and green peppers until veggies are tender and meat is browned. Drain off fat. Stir in undrained tomatoes, tomato paste, sugar oregano, and garlic; heat through.
Pour meat/sauce mixture over spaghetti crust. Bake uncovered in 350 degree preheated oven for 20 minutes. Sprinkle cheese atop. Bake another 5 minutes or until cheese is melted.
This recipe is so adaptable; adjust any ingredient to suit your family. Can be prepared very quickly by omitting the meat and using jarred sauce.
Need to feed a big family? Just double the recipe and make 2 pies. Short on time? Make it the day before, and keep well covered in the fridge. Makes great leftovers!
